·Cold foods are to be displayed at 5°C / 8°C or below.
·Hot foods are to be displayed at 60°C/63°C or hotter.
·If cold and hot foods are not meeting the above temperature standard then the foods must only be in the danger zone for a maximum of 1hours. After this time the food is to be disposed .
·Foods on display on the buffet must NOT be re-displayed at the next service or used in the EDR or under any circumstances.
·employee must take the temperatures of potentially hazardous foods during each service of breakfast, lunch and dinner. All temperatures are to be recorded.
·Foods that are not under temperature control should only be brought out to serve directly prior to consumption.
·Foods on display are to be adequately protected from contamination. This includes the use of sneeze guards, individual food covers and/or roller lids for hot foods. (optional)
·Separate serving utensils for each food on display.
·Decorative items used on the buffet are to be kept cleaned and sanitised. They must not present any physical contamination risk.
·Ensure that all food display equipment is cleaned and sanitised before use.
·The buffet should be supervised by a member of staff at all times. If a staff member believes that food that has been on display has become contaminated then the product is to be removed from the display and to be disposed of.
·A sign to the buffet should be provided stating “Guests are to use the utensils provided for the serving of food”, or similar signage with similar meaning.
·A sign to the buffet should be provided stating “If you have any food allergies or food intolerances, please inform one of our waiting staff” or similar signage with similar meaning.
·All foods on display must have individual name cards to identify the type of food for the guest or the associate. Please note that where the food item is self explanatory such as individual vegetable items, individual fruit items or individual salad items, then these are exempt from this requirement.
